Indulge in our nostalgic s'mores ice cream with graham crackers, marshmallow cream, and chocolate chips.
Ingredients:
  • 6 egg yolks
  • 3/4 cup sugar
  • 1/4 cup packed dark brown sugar
  • 1 teaspoon vanilla
  • 3 cups whole milk
  • 1 cup whipping cream
  • 1/2 cup unsweetened baking cocoa
  • 2/3 cup marshmallow creme
  • 1/4 cup coarsely crushed graham crackers
  • 1/4 cup chocolate chips
Instructions:
  • In a large bowl, use an electric mixer to beat egg yolks and sugars on medium speed for 3 to 4 minutes until creamy and pale yellow. Mix in vanilla and set aside.
  • In a 2-quart saucepan, gently heat the milk, cream, and cocoa over medium-high heat until small bubbles appear around the edge of the pan. Be careful not to let it boil. Then, remove the saucepan from the heat.
  • Gradually incorporate 1/4 cup of milk mixture into the egg mixture, beating with a whisk each time. Transfer the egg mixture to a saucepan and cook over medium-low heat until it thickens and coats the back of a spoon. Allow it to cool completely for about 30 minutes.
  • Chill the mixture in the saucepan until it is thoroughly cold, approximately 2 hours.
  • Pour the mixture into the ice cream maker and churn for around 15 minutes until it starts to thicken. Add marshmallow creme by the spoonful, then toss in the graham crackers and chocolate chips. Follow the ice cream maker's instructions to finish the process.
