S'mores Cheesecake Cupcakes

Decadent s'mores mini cheesecakes with gooey chocolate chips, marshmallows, and marshmallow frosting.
Ingredients:
  • 0.5 cup semisweet chocolate chips
  • 1 cup mini marshmallows
  • 1 (14.4 ounce) package graham cracker crumbs
  • 1 cup butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 0.25 cup white sugar
  • 0.5 cup milk
  • 0.25 cup all-purpose flour
  • 1 (7 ounce) jar marshmallow cream
  • 1 teaspoon cocoa powder
Instructions:
  • Take a chocolate chip and insert it into each marshmallow, using a hot metal spoon to help the marshmallow adhere to the chocolate, forming a tiny ball. Arrange the marshmallows on a plate lined with waxed paper and place in the freezer.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease 2 muffin tins.
  • Combine graham cracker crumbs and melted butter in a bowl.
  • Press the graham cracker mixture firmly into the muffin tins using the back of a spoon to form a delicious crust at the bottom of each cup.
  • In a large mixing bowl, achieve creamy consistency by blending together cream cheese and sugar using an electric mixer. Stir in milk, then incorporate eggs one at a time, mixing lightly. Finish by whipping in sour cream, flour, and vanilla extract until batter is velvety.
  • Spoon batter into muffin cups, add a frozen marshmallow ball to the center of each, then spoon more batter on top.
  • Place dish in the preheated oven and bake until firm, for 15 to 20 minutes. Allow to cool entirely for about 30 minutes.
  • Transfer the fluffy marshmallow cream into a small pot and gently warm over low heat for approximately 5 minutes until it softens. Stir in the aromatic cinnamon and cocoa powder. Finally, elegantly pipe the delectable frosting over the cooled cupcakes.
