Indulgent s'mores cheesecake brownies - a campfire treat without the campfire.
Ingredients:
  • 1 box (19.1 oz) Betty Crocker™ Delights Supreme Fudge Brownie Mix
  • Water, vegetable oil and egg called for on brownie mix box
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup Greek vanilla yogurt
  • 1 cup marshmallow creme
  • 2 tablespoons sugar, if desired
  • 4 oz semisweet baking chocolate, chopped, or 1/2 cup semisweet chocolate chips
  • 1/2 cup whipping cream
  • 1 cup graham cracker crumbs
  • 2 tablespoons coconut oil, melted
Instructions:
  • Prepare and bake the brownies according to the instructions on the box. Allow them to cool completely for about 45 minutes. Cut the brownies into approximately 1/2-inch cubes and set them aside.
  • Using an electric mixer, blend the cream cheese in a medium bowl until velvety. Mix in the yogurt, marshmallow creme, and sugar if you desire a sweeter taste. Transfer the smooth cream cheese mixture to a decorating bag or a resealable plastic bag with a corner snipped off for easy piping.
  • In a separate bowl, add the chopped chocolate. In a small saucepan, gently warm the whipping cream over medium-low heat or heat in the microwave for 1 to 1.5 minutes until hot and steaming. Pour the hot cream over the chocolate and whisk until a smooth and glossy ganache forms.
  • Combine graham cracker crumbs and melted coconut oil in a small bowl, stirring until well mixed.
  • Assemble layers of cracker mixture, cream cheese mixture, brownie cubes, and ganache in cups or jars. Add extra marshmallow creme, graham crumbs, or brownie chunks on top for garnish, if desired.
  • Chill in the refrigerator for a minimum of 2 hours before serving.
