Irresistible s'mores cookies with graham cereal, pudding, marshmallows broiled for a toasty finish.
Ingredients:
  • 2.25 cups all-purpose flour
  • 0.5 pound butter, at room temperature
  • 0.75 cup packed brown sugar
  • 1 (3.4 ounce) package instant vanilla pudding mix (such as Jell-O®)
  • 2 large eggs
  • 1 teaspoon vanilla extract, or more to taste
  • 1 cup semisweet chocolate chunks
  • 1 cup honey graham cereal (such as Golden Grahams®)
  • 0.5 (10.5 ounce) package miniature marshmallows
Instructions:
  • Preheat your oven to 350°F (175°C) for optimal baking temperature.
  • Combine flour, baking soda, and salt in a generous-sized bowl, sifting to mix thoroughly.
  • In a large bowl, cream together butter, brown sugar, and white sugar until light and fluffy using an electric mixer. Mix in instant pudding until well combined. Add eggs and vanilla extract, mixing thoroughly and scraping down the sides of the bowl as needed. Gradually incorporate flour into the mixture until well blended. Gently fold in chocolate chunks and cereal until evenly distributed.
  • Scoop cookie dough onto a baking sheet without greasing, using a 2-ounce ice cream scoop for larger cookies or rounded tablespoons for smaller ones.
  • Bake in the preheated oven for about 15 minutes until the edges turn golden. Top each cookie with 5 or 6 marshmallows.
  • Position an oven rack 6 inches away from the heat source and preheat the broiler. Put the cookies under the broiler with the door left slightly open. Toast the marshmallows for 15 to 30 seconds until slightly golden, keeping a close eye. Take the cookies out of the oven and allow them to cool on a wire rack for 1 minute before enjoying.
