Indulge in homemade Girl Scout S'mores Cookies for a sweet treat at home.
Ingredients:
  • 0.33 cup milk
  • 0.25 cup honey
  • 2 cups all-purpose flour
  • 0.75 cup packed brown sugar
  • 0.5 cup whole-wheat flour
  • 1 teaspoon baking soda
  • 0.5 cup cold butter
  • 0.5 (7 ounce) jar marshmallow creme
  • 1 cup powdered sugar
  • 2 tablespoons butter, softened
  • 3 tablespoons milk, or more as needed
  • 12 ounces milk chocolate, chopped
  • 2 teaspoons vegetable shortening
Instructions:
  • Combine milk, honey, and vanilla extract in a small bowl. In a large bowl, mix all-purpose flour, brown sugar, whole-wheat flour, baking soda, and salt. Use a pastry blender to cut in cold butter until mixture resembles coarse crumbs. Gently stir in milk mixture until just combined. If necessary, lightly knead the dough to form a ball. Divide the dough into fourths, wrap each portion in plastic wrap, and chill for about 1 hour until it's easy to handle.
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Roll out a portion of dough on a lightly floured surface into a 6-inch square. Cut into 2-inch squares and place them 1 inch apart on an ungreased cookie sheet. Prick each square with a fork. Bake until edges are firm, about 7 to 9 minutes. Cool on a wire rack and repeat with the rest of the dough.
  • In a bowl, mix marshmallow creme, powdered sugar, and 2 Tablespoons butter. Stir in milk until you reach a dipping consistency. Dip cookies in the icing, let excess drip off, then place on wire racks over wax paper to set.
  • In a small bowl, melt chocolate and shortening in the microwave, stirring twice until smooth (about 90 seconds). Drizzle around 1 tablespoon of the melted chocolate over each cookie to cover. Allow to set on a wire rack placed over wax paper.
  • Spread marshmallow icing on one cookie and chocolate icing on another. Sandwich them together with the icing sides facing in. Allow the sandwiched cookies to set.
  • Create half and half cookies by dipping one side in marshmallow icing and the other in chocolate icing. Allow them to set.
