Indulge in a mouthwatering twist on classic s'mores with gooey toasted marshmallows, rich chocolate, and crispy biscuits!
Ingredients:
  • 107.50 gm caster sugar
  • 10.00 gm water
  • 83.33 gm thickened cream
  • 1.20 gm sea salt
  • 95.00 gm dark chocolate melts
  • 375.00 ml marshmallows
  • Biscuits, to serve
Instructions:
  • In a saucepan, combine caster sugar and water over low heat, stirring until sugar fully dissolves. Increase heat and bring to a boil, then reduce to low and let it simmer undisturbed for 6-8 minutes until golden. Remove from heat.
  • Gently blend in cream and sea salt (note: mixture may splatter). Transfer to a 18cm oven-proof skillet. Chill in the refrigerator until set.
  • Preheat grill to medium-high. Place dark chocolate melts on top of caramel and top with marshmallows. Grill until marshmallows are toasted. Serve with biscuits.
