Indulge in saag pizza with paneer, spinach, and mozzarella.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 1 long fresh green chilli, thinly sliced
  • 1/2 tsp cumin seeds, lightly crushed
  • 1 bunch English spinach, trimmed, washed, dried, chopped
  • 150g (1 1/2 cups) coarsely grated mozzarella
  • 100g paneer cheese, crumbled
  • 1 1/2 tsp instant dried yeast
  • 330ml (1 1/3 cups) warm water
  • 500g (3 1/3 cups) bread and pizza plain flour
  • 4.80 gm table salt
  • 36.40 gm extra virgin olive oil
Instructions:
  • For the pizza dough, whisk together yeast and 80ml (1/3 cup) warm water in a small bowl using a fork until frothy. Cover with plastic wrap and let sit in a warm place for 5 minutes. In a large bowl, whisk together flour and salt, then make a well in the center. Pour in the yeast mixture, oil, and the remaining 250ml (1 cup) warm water. Stir until just combined, then use your hands to bring the dough together. Turn the dough out onto a lightly floured surface and knead for 12-15 minutes. Grease a large clean bowl with olive oil, add the dough, and coat it. Cover with a clean tea towel and let it sit in a warm, draft-free place for 1-2 hours until doubled in size.
  • Place half the dough on a lightly floured surface. Cover the rest with plastic wrap for later. Roll out the dough into a 20 x 35cm oval shape. Move it to a greased baking tray and let it rest for 20 minutes to rise.
  • Preheat the oven to 230°C/210°C fan forced. In a large frying pan over medium heat, heat the oil. Sauté the garlic, chilli, and cumin until fragrant, about 1 minute. Add the spinach and cook until wilted and excess liquid evaporates, about 5 minutes. Season to taste, then transfer the mixture to a heatproof bowl and let cool slightly.
  • Spread a generous layer of mozzarella and paneer on the pizza dough, then add the flavorful spinach mixture on top. Bake for 15 minutes or until the cheese is gooey and the crust is perfectly crispy.
