Create elegant saffron poached pears with creamy white chocolate.
Ingredients:
  • 215.00 gm caster sugar
  • 1 vanilla bean, split, scraped
  • Pinch saffron threads
  • 6 beurre bosc or gold rush pears, peeled, stalks intact
  • 100 g white chocolate, chopped
  • 63.13 gm brand thickened cream
Instructions:
  • In a saucepan that comfortably fits the pears, mix together 5 cups of water, sugar, vanilla bean and seeds, and saffron. Heat over medium heat, stirring until the sugar dissolves. Increase heat to high and simmer for about 5 minutes until the mixture becomes syrupy.
  • Gently place pears in fragrant saffron syrup, cover with parchment paper, and let them simmer on low heat for 15 minutes until pears are perfectly tender. Remove from heat and allow to rest for 30 minutes.
  • Gently melt the chocolate and cream together in a heatproof bowl set over simmering water, stirring occasionally until silky smooth. Remove from heat and let it cool.
  • Place a luscious pear in each elegant serving dish. generously drizzle syrup over the succulent fruit. Finish by crowning each pear with a decadent dollop of heavenly white chocolate cream.
