Saffron-poached pears

Ingredients:
  • 4 medium pears
  • 10 cardamom pods
  • 320 g caster sugar
  • ½ a vanilla pod
  • 100 mg saffron
  • 1 small stick of cinnamon
Instructions:
  • Peel the pears, keeping the stem on. Crush the cardamom pods. In a saucepan, combine all ingredients with 1 liter of water. Simmer gently until pears are tender, about 2 hours. Let cool and refrigerate overnight. Bring pears to room temperature. Boil the syrup until it thickens to about 250ml. Drizzle 2 tablespoons of saffron glaze over pears and serve with ice cream or cream.
