Elevate roast chicken with savory sage and creamy bocconcini.
Ingredients:
  • 4 (about 800g) chicken breast fillets
  • 1 bunch sage, leaves picked
  • 8 bocconcini balls
  • 8 slices prosciutto
  • 250ml white wine
  • 400g can cherry tomatoes
  • Steamed green beans, to serve
Instructions:
  • Take a sharp knife to slice a pocket in each chicken breast. Stuff each pocket with a sage leaf and 2 bocconcini. Wrap each breast in 2 slices of prosciutto and additional sage leaves to seal the filling. Season generously with salt and pepper.
  • In a hot non-stick pan, sear the chicken in oil for 2 minutes on each side until golden. Set aside. Deglaze the pan with wine and let it simmer. Stir in tomatoes, return the chicken to the pan, and cook covered for 10 minutes until chicken is tender and sauce thickens slightly. Remove from heat and serve.
  • Divide among plates and serve immediately with steamed green beans, if desired.
