Unforgettable pork dish with Chinese spices and zesty orange juice.
Ingredients:
  • 62.50 ml fresh sage leaves, coarsely chopped
  • 1 garlic clove, crushed
  • 1 tsp finely grated orange rind
  • 21.00 gm fresh orange juice
  • 1/2 tsp Chinese five-spice
  • 36.40 gm olive oil
  • 4 (about 140g each) pork loin cutlets
  • 1 x 240g pkt cherry truss tomatoes
  • 250g green beans, topped
Instructions:
  • Preheat oven to 200°C. Combine sage, garlic, orange rind, orange juice, Chinese five spice, and 1 tablespoon of oil in a food processor, finely chop. Season with salt and pepper. Coat pork with sage mixture. Refrigerate for 10 minutes to enhance flavors.
  • Line a baking tray with non-stick baking paper. Arrange the tomatoes on the tray, drizzle with 1 teaspoon of remaining oil, and season with salt and pepper. Bake in the oven for 12-15 minutes until tender.
  • Boil beans in a saucepan until vibrant green and tender, about 3-4 minutes. Drain thoroughly.
  • In a hot frying pan, sear pork in oil for 1 minute on each side. Lower heat and continue cooking for 3-5 minutes on each side, until desired doneness. Serve pork with tomatoes, beans, and gratin on individual plates. Enjoy!
