Classic Chocolate Pudding: Rich, decadent, and utterly delicious - just like Mom used to make.
Ingredients:
  • 160 g unsalted butter plus extra for greasing
  • 160 g quality dark chocolate (70%)
  • 160 g golden syrup
  • 70 ml double cream
  • 150 g unsalted butter (at room temperature)
  • 100 g dark brown muscovado sugar
  • 350 g self-raising flour
  • 90 g cocoa powder
  • 2 large free-range eggs
  • 180 ml semi-skimmed milk
Instructions:
  • Prepare the pudding basin by greasing it with butter. Melt all the sauce ingredients in a saucepan over low heat, stirring continuously, then pour into the bottom of the basin and let it cool slightly. Cream butter and sugar until pale and fluffy using a stand mixer or electric whisk for 2-3 minutes. Add the remaining ingredients and whisk for 5 minutes until smooth. Spoon the mixture over the chocolate sauce in the basin and spread evenly. Cover the basin tightly with foil and place it in a roasting tin filled halfway with boiling water. Steam on low heat for 2 hours, checking and adding boiling water as needed. Remove and cool for a minute, then flip onto a serving plate to reveal the fudgy pudding. Serve with custard, whipped cream, or ice cream and enjoy!
