Elevate a classic jacket potato with a loaded, flavorful twist.
Ingredients:
  • 6 large Sebago potatoes, scrubbed
  • 18.20 gm extra virgin olive oil
  • 125.00 gm spreadable cream cheese
  • 77.55 gm sour cream
  • 2 tsp chopped fresh dill
  • 1 tsp finely grated lemon rind
  • 10.60 gm lemon juice
  • 2 green onions, sliced
  • 2 tsp drained baby capers, chopped
  • 210g can red salmon, drained, skin and bones removed, flaked
  • Lemon rind, extra, finely grated, to serve
  • Fresh dill sprigs, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Pat dry the potatoes with paper towel, then pierce them all over with a fork. Place the potatoes on the tray, drizzle with oil, and season with salt and pepper.
  • Roast until golden and tender, for about 1 hour and 15 minutes. Let the potatoes cool for 5 to 10 minutes before handling.
  • In a bowl, mix together cream cheese, sour cream, dill, lemon rind, lemon juice, onion, capers, and salmon. Season with salt and pepper. Stir until well combined.
  • With a small knife, make a cross on the top of each potato and gently squeeze the base to open the top. Plate the potatoes and top them with the salmon mixture. Sprinkle with extra lemon rind and dill sprigs before serving.
