Salmon, leek and fennel parcels

Crispy filo parcels with Australian salmon, leek, and fennel - a delicious and easy recipe to try!
Ingredients:
  • 9.20 gm olive oil
  • 700g skinless boneless Australian salmon fillets
  • 25g butter
  • 1 leek, trimmed, finely sliced
  • 1 fennel bulb, trimmed, halved, thinly sliced
  • 20.00 ml plain flour
  • 257.50 gm milk
  • 2 tsp finely grated lemon rind
  • 12 sheets fresh filo pastry
  • Olive oil spray
  • 9.00 gm sesame seeds
Instructions:
  • In a large deep frying pan over medium heat, heat 1 teaspoon of oil. Cook half of the salmon for 2 minutes on each side until golden brown. Transfer to a plate to cool, and then repeat the process with the remaining oil and salmon.
  • - In a pan, combine butter, leek, and fennel. Cook over medium heat, stirring frequently, for about 10 minutes or until the vegetables are very soft. Sprinkle in the flour and cook, while stirring, for 1 minute. Gradually pour in the milk, stirring constantly with each addition. Bring the mixture to a boil and let it cook for 1 minute.
  • Mix in the fragrant lemon zest and season the sauce. Gently break the salmon into pieces and fold into the flavorful mixture. Place in a bowl and chill in the refrigerator until cold. Preheat the oven to 200C or 180C fan-forced and line a spacious baking tray with parchment paper.
  • Lay the filo on a tidy work surface and layer with a dry tea towel followed by a damp one to keep it moist. Lightly spray one sheet with oil and layer another sheet on top. Separate the filling into 6 equal portions. Spread one portion in a rectangular shape at one end of the filo, about 7cm from the edges. Fold the end over, then fold the sides in. Roll up to seal the filling. Repeat with the rest of the filo and filling to create 6 parcels.
  • Transfer the parcels onto a baking tray lined with parchment paper. Lightly spritz the tops with oil and generously sprinkle sesame seeds over them. Bake in the oven for about 25 minutes, or until beautifully golden brown.
