Salmon & caper tartlets

Host a chic cocktail party at sunset in your backyard with elegant appetizers.
Ingredients:
  • 9.20 gm olive oil
  • 300g salmon fillet
  • 60g cream cheese, at room temperature
  • 25g butter, at room temperature
  • 40.00 ml chopped fresh dill
  • 21.00 gm fresh lemon juice
  • Large pinch of cayenne pepper
  • 2 x 60g packets Salad/Cocktail Cups (see note)
  • 40.00 ml baby capers, rinsed, drained
  • Fresh dill sprigs, to serve
Instructions:
  • In a small heavy-based frying pan over medium heat, heat oil. Cook salmon skin-side down for 2-3 minutes on each side or until just cooked through. Transfer to a plate and set aside to cool.
  • Peel off salmon skin and remove bones. Blend salmon, cream cheese, butter, dill, lemon juice, and cayenne pepper in a food processor until creamy. Season with salt and pepper to taste.
  • Distribute the salmon mixture evenly into the cocktail cups, then garnish with capers and dill sprigs on top.
