Transform salmon into a delectable family dinner with simple and reliable foil parcels.
Ingredients:
  • 4 (about 125g each) coliban potatoes, cut into 5mm-thick slices
  • 1 leek, halved lengthways, cut into 6cm lengths, washed, dried
  • 1 bunch asparagus, diagonally halved
  • 2 carrots, peeled, cut into matchsticks
  • 4 skinless salmon fillets
  • 160ml white wine
  • 150ml light & creamy evaporated milk
  • 82.50 ml fresh dill leaves
  • Freshly ground pepper
  • Lime wedges or lemon wedges, to serve
Instructions:
  • Preheat the oven to 180°C. Cut 4 pieces of foil, each 50cm long. Fold each piece of foil in half, then fold in two sides, leaving one open to create a parcel.
  • Place the potato slices in a shallow microwave-safe dish with a small amount of water. Microwave on HIGH power for 1-2 minutes until they are slightly tender.
  • Evenly distribute the potato slices on the foil parcels. Arrange the leek, asparagus, and carrots on top. Place a piece of salmon on each vegetable parcel. Pour 2 tablespoons of wine and a splash of milk into each parcel. Sprinkle with dill and season with pepper. Seal the parcels by folding the tops over the filling.
  • Arrange the parcels on a baking tray and bake for 10-15 minutes until the fish flakes easily. Serve with lime or lemon wedges.
