Ingredients:
  • 4 (200g each) salmon fillets, skin on
  • 20.00 ml fresh dill sprigs
  • 2 medium lemons, thinly sliced
  • 20.00 ml drained baby capers
  • 42.00 gm lemon juice
  • Salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced).
  • Lay the salmon fillets on one side of each parchment paper round. Divide the dill, lemon slices, capers, and lemon juice evenly among the fillets. Sprinkle with salt and pepper. Fold the paper over the toppings, then fold the edges to seal the packets. Transfer them to a baking tray.
  • Bake until salmon is perfectly cooked, about 12 minutes.
  • Garnish with fresh, crisp salad leaves.
