Quick and easy recipe for busy days - satisfying in no time!
Ingredients:
  • 2 green onions, sliced
  • 410g can crushed tomatoes
  • 20.00 ml chopped fresh basil leaves
  • 300g fresh ricotta cheese, crumbled
  • 2 tsp finely grated lemon rind
  • 415g can Wild Alaskan Red Salmon, drained, skin and bones removed, flaked
  • 3 fresh lasagne sheets, cut into thirds
  • 125.00 ml grated tasty cheese salad leaves, to serve
Instructions:
  • In a heavy-based frying pan with a flameproof handle, heat half of the oil over medium-high heat. Sauté the onion and garlic for 3 minutes. Stir in the tomato and basil, cooking for an additional 2 minutes until heated through. Transfer the mixture to a bowl and clean the pan.
  • Mix together the creamy ricotta, fresh lemon zest, and savory salmon in a bowl. Season generously with a pinch of salt and a crack of black pepper.
  • Drizzle the remaining oil in the pan and layer 3 pieces of lasagne over the base. Spread half of the ricotta mixture and one-third of the tomato mixture. Repeat with another pasta layer and the rest of the ricotta mixture. Finish by topping with half of the remaining tomato mixture, the rest of the pasta, the rest of the tomato mixture, and sprinkle with cheese.
  • Preheat the grill on high then return the pan to medium-low heat. Cover and cook for 8 to 10 minutes until the lasagne is tender. Remove the lid, grill for 5 minutes until the cheese has melted, then season with pepper. Serve alongside salad leaves.
