Salmon & couscous

Delicious and quick salmon and couscous salad - perfect for a healthy dinner.
Ingredients:
  • 75 g couscous
  • 1 small courgette
  • 1 handful of asparagus
  • 1 fresh red chilli
  • 2 ripe tomatoes
  • a few sprigs of fresh coriander
  • 1 x 120 g salmon fillet skin on, scaled, pin-boned, from sustainable sources
  • extra virgin olive oil
  • ½ a lemon
  • 1 tablespoon fat-free natural yoghurt
Instructions:
  • In a bowl, pour boiling water over the couscous until just covered. Cover with a plate and let it sit for 10 minutes. Cut the courgette into batons, snap asparagus ends, and finely chop the chilli. Chop the tomatoes and coriander. Slice salmon into strips, drizzle with olive oil, season with salt and pepper. Cook salmon, courgette, and chilli in a pan for 2 minutes. Mix tomatoes, lemon juice, oil, coriander into couscous. Season with salt and pepper. Place salmon on a plate, add couscous to the pan with veggies. Mix together, then place salmon on top. Cover and cook for 1 minute. Serve on a plate with a dollop of yogurt. Enjoy!
