Salmon Couscous Salad

Delicious salmon and couscous salad topped with arugula and homemade pesto dressing.
Ingredients:
  • 1/4 cup pesto
  • 1/2 cup mayonnaise
  • 1/2 cup buttermilk
  • 1 clove garlic
  • Black pepper to taste
Instructions:
  • Combine mayonnaise, buttermilk, pesto, lemon juice, garlic in a food processor and blend until smooth. Season with black pepper to taste. Set the dressing aside.
  • Heat a skillet over medium-high heat. Season salmon with Greek seasoning and cut it into two filets. Melt butter and olive oil in the skillet over medium heat. Place salmon, skin side down, in the skillet and cook until it flakes easily with a fork, about 8 minutes.
  • Boil water in a saucepan, then mix in couscous. Cover and allow to sit until water is fully absorbed, approximately 10 minutes.
  • Divide salad mixture between 2 dinner bowls, top with chopped tomatoes. Fluff couscous with a fork and place in the center of each bowl. Sprinkle Parmesan cheese around couscous and add a salmon filet to the side. Drizzle with 1 to 2 tablespoons pesto dressing and sprinkle with pepitas. Serve promptly.
