Whip up this quick and nutritious dish in no time!
Ingredients:
  • 240g (1 1/4 cups) whole wheat couscous
  • 45g (1/4 cup) sundried tomato strips
  • 3 oranges
  • 310ml (1 1/4 cups) boiling water
  • 2 green shallots, trimmed, thinly sliced
  • 55g (1/3 cup) roasted hazelnuts, coarsely chopped
  • 250.00 ml fresh continental parsley leaves
  • 300g hot-smoked Tasmanian salmon, roughly flaked
  • 60ml (1/4 cup) olive oil
  • 1.25 gm mixed spice
Instructions:
  • In a large heatproof bowl, combine the couscous, sundried tomatoes, and finely grated rind of 1 orange. Season to taste. Pour in the boiling water, stir well, cover, and let sit for 5 minutes until fully absorbed.
  • Peel and segment the oranges, saving 2 tablespoons of juice. Combine half of the orange segments, shallot, hazelnut, parsley, and half of the salmon in a large bowl. Fluff the couscous with a fork and fold it into the orange mixture.
  • In a small bowl, mix the reserved orange juice, olive oil, and mixed spice. Season with salt and pepper. Pour over the orange mixture and toss gently. Serve on plates and garnish with the remaining salmon and orange segments.
