Salmon and Couscous Bake

Try this delicious baked salmon pasta casserole for a quick and satisfying dinner. Ready in just 40 minutes.
Ingredients:
  • 1 pound salmon fillets, about 3/4 inch thick
  • 1 package (5.6 ounces) toasted pine nut couscous mix
  • 1 1/2 cups hot water
  • 1 tablespoon olive or vegetable oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried dill weed
  • 1 small zucchini, coarsely chopped
  • 1 small yellow summer squash, coarsely chopped
  • 1/4 teaspoon dried dill weed
  • Toasted pine nuts, if desired
Instructions:
  • Preheat oven to 350°F. Grease an 8x8x2 inch square baking dish with cooking spray. Cut the fish into 4 serving pieces.
  • Combine couscous, couscous seasoning packet, water, oil, lemon juice, 1/2 teaspoon dill weed, zucchini, and summer squash in a baking dish. Lay fish over the couscous mixture and top with 1/4 teaspoon dill weed.
  • Bake for 20-25 minutes until the liquid is absorbed and the fish flakes easily with a fork. Top with pine nuts before serving.
