Salmon skewers with almond salsa verde

Prepare delicious salmon skewers with 16 pre-soaked bamboo skewers.
Ingredients:
  • 800g skinless salmon fillets, deboned, cut into 2.5cm pieces (see tip)
  • olive oil cooking spray
  • 50g almond
  • 250.00 ml firmly-packed fresh flat-leaf parsley leaves
  • 82.50 ml firmly-packed fresh mint leaves
  • 6 green onions
  • 40.00 ml capers, drained
  • 2 garlic cloves
  • 20.00 ml red wine vinegar
Instructions:
  • Create a flavorful almond salsa verde: Simply combine all ingredients in a food processor and pulse until finely chopped. Incorporate 2 tablespoons of cold water and pulse until perfectly blended. Chill in the refrigerator before serving.
  • Skewer the salmon and season generously with pepper. Lightly coat with oil. Heat a large non-stick pan over medium-high heat and cook skewers in batches for 1 to 2 minutes on each side, or until desired doneness. Transfer to a plate, cover with foil to keep warm, and enjoy with salsa verde.
