Succulent salmon skewers with zesty wasabi mayo, ideal for festive lunar new year feasting.
Ingredients:
  • 42.00 gm Japanese Soy Sauce
  • 20.00 gm Mirin Seasoning
  • 3 tsp Cooking Sake
  • 7.50 gm caster sugar
  • 1 1/2 tsp finely grated fresh ginger
  • 2 green shallots, cut into 2cm lengths, plus extra, sliced, to sprinkle
  • 4 Salmon Skin off Fillets
  • 500.00 ml finely shredded white cabbage
  • Fresh coriander sprigs, to sprinkle
  • Black sesame seeds, to sprinkle
  • Lime cheeks, to serve
  • 125g (1 ⁄2 cup) Kewpie Mayonnaise
  • 2 tsp Wasabi paste
  • 1/2 lime, juiced
Instructions:
  • Combine soy sauce, mirin, cooking sake, sugar, and ginger in a small bowl. Whisk with a fork until the sugar is fully dissolved.
  • Combine all ingredients to create a flavorful wasabi mayo in a small serving bowl.
  • Skewer pieces of shallot and salmon onto 8 soaked bamboo sticks in an alternating pattern.
  • Lay out the white cabbage on a serving platter and generously sprinkle with coriander, sesame seeds, and extra shallot for added flavor and texture.
  • Heat a large non-stick frying pan over medium-high heat. Give it a quick spray of oil. Place skewers in the pan. Brush with part of the soy sauce mixture and cook for 30 seconds. Flip and brush with the rest of the soy mixture. Cook for another 30 seconds or until done to your preference. Transfer skewers to a platter.
  • Complete the pan by pouring in the remaining soy sauce mixture. Let it simmer for 30 seconds, then generously drizzle the sauce over the skewers. Serve alongside the wasabi mayo and lime cheeks for a delicious finish.
