Indulge in a decadent seafood dish: crab and lobster-stuffed salmon with a zesty barbecue glaze.
Ingredients:
  • cooking spray
  • 2 small lemons
  • 1 tablespoon salted butter
  • 0.5 medium onion, diced
  • 2 cloves garlic, diced
  • 0.5 pound crabmeat, coarsely chopped
  • 0.5 pound lobster meat, chopped
  • 6 ounces goat cheese, crumbled
  • 2 (8 ounce) salmon fillets
  • 2 tablespoons barbecue sauce, or to taste
Instructions:
  • Heat your oven to 350 degrees F (175 degrees C). Grease a baking dish. Slice one lemon and squeeze the juice of the other; keep aside.
  • In a medium skillet over medium heat, melt butter. Add onion and garlic; saute until golden brown, about 7 to 8 minutes. Remove from heat.
  • Finely pulse crab and lobster in a food processor. Combine with onion mixture, goat cheese, and lemon juice in a bowl.
  • Halve each piece of salmon. Stuff each piece with crab and lobster mixture, then secure closed with kitchen twine. Arrange in baking dish. Top with lemon slices and smother in barbecue sauce.
  • Bake the covered dish in the preheated oven for 45 minutes, then uncover and continue baking until the fish flakes easily with a fork, about 15 minutes more.
