Impress with easy-to-make stuffed salmon filled with crab, shrimp, Parmesan, and breadcrumbs.
Ingredients:
  • cooking spray
  • 2 (7 ounce) salmon fillets, skin removed
  • 1 (6 ounce) can lump crabmeat, drained and flaked
  • 1 (4 ounce) can tiny shrimp, drained
  • 0.5 cup chopped mushrooms
  • 0.25 cup mayonnaise
  • 0.25 cup shredded Parmesan cheese
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped green onion
  • 2 tablespoons dry bread crumbs
  • 0.5 teaspoon seafood seasoning (such as Old Bay®), or more to taste
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly coat a sheet pan with cooking spray.
  • Make a long slit in the center of each salmon fillet, reaching about 2/3 of the way through. Set aside.
  • Combine the crab, shrimp, mushrooms, mayonnaise, Parmesan cheese, lemon juice, green onion, and bread crumbs in a bowl.
  • Divide 2/3 of the stuffing mixture into 2 large mounds on the sheet pan. Place a fillet over each mound, filling the top of the slits with the remaining stuffing. Sprinkle seafood seasoning over each fillet.
  • Roast the salmon in the heated oven until it easily flakes with a fork and the stuffing is hot, approximately 30 minutes.
