Feta-Spinach Stuffed Salmon

Stuffed salmon duo filled with creamy feta, cream cheese, and spinach layers.
Ingredients:
  • 0.5 (8 ounce) package cream cheese, softened
  • 1 (4 ounce) package crumbled feta cheese, or to taste
  • 0.33333334326744 cup frozen chopped spinach - thawed, drained, and squeezed dry
  • 2 stalks scallions, white and green parts, thinly sliced
  • 1 (3/4 pound) boneless salmon fillet
  • 1 tablespoon olive oil, or as needed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a large baking dish with cooking spray.
  • In a small mixing bowl, mix together cream cheese, feta cheese, spinach, and scallions until evenly combined.
  • Divide the salmon fillet into 2 equal portions. Brush one portion with olive oil and lay it oiled side down in the baking dish. Spread the filling evenly over the salmon to create a 3/4 inch layer. Top with the remaining salmon portion and brush the top with olive oil.
  • Roast in the preheated oven until the fish easily flakes with a fork and the filling is piping hot, about 20 to 30 minutes. Please adjust the time based on the thickness and weight of the salmon; check after 20 minutes to see if more baking time is required.
  • Slice the dish in half after removing it from the oven to serve.
