Delicious stuffed mushrooms with feta and spinach - great for parties or as a side! Easy to make.
Ingredients:
  • fat-free cooking spray
  • 8 medium button mushrooms
  • 2.5 teaspoons olive oil, divided
  • 2 cups baby spinach
  • 0.5 cup crumbled reduced-fat feta cheese
  • 1 clove garlic, minced
  • 1.5 teaspoons chopped fresh parsley
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a baking sheet with cooking spray.
  • Carefully detach stems from mushroom caps, chop them finely, and transfer to a bowl. Arrange caps on baking sheet, open side facing up.
  • In a skillet over gentle heat, warm 1 teaspoon of oil. Add the spinach and cook until it wilts, around 2 minutes.
  • Combine the wilted spinach with diced mushroom caps, feta cheese, garlic, and parsley, mixing until fully incorporated.
  • Fill each mushroom with the delicious spinach mixture and generously drizzle them with the remaining 1 1/2 teaspoons.
  • Bake until golden brown, approximately 20 minutes in the preheated oven.
