Stuffed mushrooms with Mediterranean beans, feta, and pine nuts for a quick and tasty dinner option.
Ingredients:
  • 4 large field mushrooms, stems trimmed
  • 36.40 gm extra virgin olive oil
  • 420g can Heinz® Beanz Creationz™ Mediterranean Style Beanz
  • 50g reduced fat feta
  • 20.00 ml pine nuts
  • 8 small thyme sprigs
  • Radicchio salad, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Line a baking tray with paper. Place mushrooms on the tray, stalk side up, and drizzle with oil. Bake for 5 - 8 minutes.
  • Spoon the Beanz Creationz™ into the mushrooms, then sprinkle with crumbled feta. Add pine nuts and thyme sprigs on top. Bake for 10 more minutes until the mushrooms are tender and the feta is golden.
  • Pair with a zesty radicchio salad.
