Creamy stuffed salmon fillets filled with cream cheese, blue cheese, spinach, lemon, and breadcrumbs.
Ingredients:
  • 2 teaspoons olive oil, divided, or as needed
  • 0.25 cup chopped onion, or more to taste
  • 0.5 (8 ounce) package cream cheese
  • 0.25 cup crumbled blue cheese
  • 1 cup chopped fresh spinach
  • 1 tablespoon dry bread crumbs
  • 1 clove garlic, minced, or to taste
  • salt and ground black pepper to taste
  • 1 (8 ounce) salmon fillet
  • 1 teaspoon lemon juice, or to taste
Instructions:
  • In a skillet over medium heat, cook the onion in 1 teaspoon of oil until softened and translucent, about 5 minutes. Transfer to a bowl once done.
  • In a microwave-safe bowl, melt the cream cheese and blue cheese together on high for 25 seconds.
  • Combine the cheese mixture, spinach, bread crumbs, garlic, salt, and pepper with the onions until thoroughly mixed. Chill the stuffing in the freezer for 15 to 20 minutes.
  • Preheat your oven to 350 degrees F (175 degrees C) and line a baking dish with parchment paper.
  • Cut the salmon into two portions and butterfly each portion without cutting all the way through.
  • In a skillet over medium heat, warm the remaining oil. Cook the salmon until golden on each side for about 15 seconds per side. Place the salmon in the prepared baking dish.
  • Remove the stuffing from the freezer and shape it into 2 balls. Place one ball inside each piece of salmon.
  • Simply bake in the preheated oven until the fish flakes easily with a fork, about 15 to 17 minutes. Finish by garnishing with lemon juice.
