Salmon tartare salad on light rye

Ingredients:
  • 19.80 gm good-quality low-fat mayonnaise
  • Zest and juice of 1 lime
  • 1 vine-ripened tomato, seeds removed, finely chopped
  • 62.50 ml finely chopped chives
  • 500.00 ml roughly chopped frisee (curly endive)
  • 2 x 180g best-quality skinless salmon fillets (see note), pin-boned, finely chopped
  • 8 small slices light rye bread, lightly toasted
Instructions:
  • In a spacious bowl, mix together mayonnaise, lime zest, lime juice, and season with sea salt and freshly ground black pepper. Incorporate the tomato, chives, and frisee. Right before serving, add the salmon and toss thoroughly. Taste and adjust seasoning as needed, then serve promptly on toast, with an optional sprinkle of extra pepper.
