Elegant Salmon Wellington: seasoned salmon fillet with spinach, feta, wrapped in flaky pastry.
Ingredients:
  • 1.5 pounds salmon fillets
  • 1 tablespoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1.5 cups mayonnaise
  • 0.5 cup Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon chopped fresh basil leaves
  • 2 teaspoons dried dill weed
  • 1 teaspoon lemon zest
  • 1 teaspoon chopped fresh thyme
  • 0.75 cup crumbled feta cheese
  • 1 cup frozen chopped spinach, thawed and drained
  • 1 (17.5 ounce) package frozen puff pastry, thawed
  • 1 egg white, beaten
  • 1 tablespoon water

Instructions:
  • Prep your ingredients. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Dry the salmon fillet with paper towels and generously season both sides with salt and pepper.
  • Combine mayonnaise, mustard, oregano, basil, dill, lemon zest, and thyme in a small bowl. Reserve half of the mixture for serving.
  • Top the salmon fillet with the remaining mixture.
  • Lay out puff pastry on a lightly floured surface and gently smooth out the folds using your fingers.
  • Lay spinach in the center of the pastry in a rectangle matching the size of the fillet, then generously sprinkle with feta cheese.
  • Lay the salmon, mayonnaise-side down, over the feta cheese.
  • In a small bowl, whisk together the egg and water. Brush the edges of the pastry with the egg wash to seal the puff pastry.
  • Gently lift the pastry edges and stretch them to fully enclose the salmon.
  • Seal edges by pinching tightly. Put bundle on baking sheet with the seam side down. Brush pastry tops and sides with egg wash.
  • Create small openings on the surface of the pastry to release steam during baking.
  • Bake in a hot oven until the pastry turns golden brown, about 40 minutes. Check the salmon's internal temperature with a thermometer; it should reach at least 145°F (62°C). Allow it to rest for a few minutes before serving.
  • Present dish with reserved herb Dijon mixture and lemon wedges on the side.
