Try this easy grilled salmon with kale and brussels sprouts slaw - only 5 ingredients for a flavorful, healthy meal!
Ingredients:
  • 750g pkt Sweet Potato Straight Cut Chips
  • 36.80 gm Extra Virgin Avocado Oil
  • 4 salmon fillets, skin off
  • 350g pkt Kaleslaw Salad Kit
  • 150g brussels sprouts, thinly sliced
Instructions:
  • Preheat the oven to 180°C and line a large baking tray with parchment paper. Spread the chips out in a single layer on the tray. Bake for 20-25 minutes until the chips are golden and crispy.
  • Preheat a chargrill to medium heat. Drizzle salmon with 1 tablespoon of oil, season with your favorite spices, and grill for 2-3 minutes on each side until cooked to your desired level of doneness.
  • In a large bowl, combine the salad kit following the packet directions. Add the Brussels sprouts and remaining oil, then toss together to mix well.
  • Plate the brussels sprout mixture and chips evenly on serving plates. Add the salmon on top of the brussels sprout mixture and serve promptly.
