Tender shredded pork loin cooked in zesty green salsa for tasty enchiladas, tamales, or burritos.
Ingredients:
  • 1 tablespoon canola oil
  • 1 (3 pound) boneless pork loin roast
  • 11 ounces green salsa
Instructions:
  • In a large Dutch oven, heat oil over medium-high heat. Sear pork loin for 2 to 3 minutes on each side until nicely browned.
  • Place the roast in the slow cooker and generously cover it with vibrant green salsa.
  • Slow cook on Low for 5 hours.
  • Using two forks, pull the pork into strands and mix it with the sauce until evenly coated. Cook on Low for an additional 1 to 3 hours.
