Salsa-roasted baby potatoes with zesty lime and cilantro.
Ingredients:
  • 1 pound baby Yukon Gold potatoes, halved
  • cooking spray
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 cup salsa
  • 4 lime wedges
  • 0.25 cup chopped fresh cilantro
  • 0.125 teaspoon salt
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and get that baking sheet dressed up with a shiny layer of aluminum foil.
  • Arrange the potatoes on the baking sheet and generously coat them with cooking spray.
  • Bake in the oven until slightly golden, around 15 minutes.
  • In a large microwave-safe bowl, mix together oil, chili powder, and cumin. Microwave for 1 minute, stirring halfway through. Add potatoes and salsa to the bowl, toss, and transfer back to the baking sheet.
  • Bake until potatoes are tender, approximately 15 minutes longer. Drizzle lime juice over the potatoes and garnish with fresh cilantro and a sprinkle of salt.
