Salt and pepper prawn skewers

Succulent prawn skewers seasoned to perfection with a blend of salt and pepper, ideal for any gathering.
Ingredients:
  • 2 tsp black peppercorns
  • 2 tsp Szechuan peppercorns
  • 4.80 gm sea salt
  • 18 large green prawns, peeled, deveined, tails intact
  • Lime wedges, to serve
Instructions:
  • Toast peppercorns in a small frying pan over medium heat until fragrant, about 1 minute. Transfer to mortar and pestle, add salt, and grind until fine. Spread on a plate and keep aside.
  • Skewer a prawn tail-end first and coat with the pepper mixture. Preheat the barbecue plate or char-grill pan on high heat.
  • Grill the prawn skewers for 1-2 minutes per side until they turn pink and are fully cooked.
  • Enhance the prawn skewers with a fresh squeeze of lime juice.
