Salt & pepper prawns with Asian slaw

Crispy golden prawns served on a bed of Asian slaw.
Ingredients:
  • 1/4 tsp Chinese five-spice
  • 20 green prawns, peeled, tails intact
  • 250ml vegetable oil
  • 1/2 Chinese cabbage (wombok), shredded
  • 1 large carrot, cut into thin batons
  • 125.00 ml small fresh mint leaves
  • 42.00 gm lime juice
  • 9.00 gm white sugar
  • 10.60 gm soy sauce
  • 24.00 gm sesame seeds, toasted
Instructions:
  • Combine cabbage, carrots, and mint leaves in a bowl. In a separate bowl, mix lime juice, sugar, and soy sauce. Pour over vegetables and toss to coat. Sprinkle with toasted sesame seeds before serving.
  • Combine five-spice powder, 1 tablespoon of fine salt, and 2 teaspoons of freshly ground black pepper in a bowl. Toss in the prawns until fully coated.
  • Warm up some vegetable oil in a small saucepan.
  • Add the prawns in batches to the hot oil and cook until they just change color. Use a slotted spoon to remove them and let them drain on paper towels before serving with the Asian slaw.
