Salt and pepper prawns with pineapple salsa

Impress guests with zesty salt and pepper prawns garnished with pineapple salsa for a festive starter.
Ingredients:
  • Lime zest, to serve
  • Lime wedges (optional), to serve
  • 800g green prawns, peeled leaving tail intact, deveined
  • 3.60 gm sea salt flakes
  • 1/2 tsp coarsely ground black pepper
  • 1/4 tsp Chinese five spice
  • Pinch ground white pepper
  • 1 tsp sesame oil
  • 1/2 ripe pineapple, cored, peeled, finely chopped
  • 1 long red chilli, seeded, finely chopped
  • 82.50 ml coriander, coarsely chopped
  • 21.00 gm lime juice
  • 1 avocado, stoned, peeled, finely chopped
Instructions:
  • In a large bowl, combine prawns with salt, black pepper, five spice, white pepper, and sesame oil. Mix well to coat evenly.
  • Preheat a large frying pan over high heat. Cook the prawns in batches for 2 minutes on each side, or until they curl and change color. Transfer the prawns to a serving platter.
  • Mix together the pineapple, chili, coriander, and lime juice in a bowl. Stir well before adding the avocado and gently mixing everything together.
  • Garnish prawns with zesty salsa and sprinkle with fresh lime zest. Serve promptly with optional lime wedges on the side.
