Impress guests with savory Vietnamese salt & pepper squid.
Ingredients:
  • 400g calamari
  • 82.50 ml potato flour
  • 9.60 gm sea salt
  • 1 1/2 tsp ground white pepper
  • 1/2 tsp Chinese five spice
  • Vegetable oil, for shallow frying
  • 1 long red chilli, thinly sliced
  • 1 green onion, thinly sliced diagonally
Instructions:
  • Preheat the oven to 160°C/140°C fan-forced. Halve the calamari, score the inside flesh, and cut it into 3cm pieces.
  • In a convenient snap-lock bag, mix flour, salt, pepper and Chinese five spice. Pour enough oil into a large, deep frying pan to reach 5mm up the side of the pan. Heat on medium-high heat.
  • Take one-third of the calamari and gently mix it into the flour mixture until fully coated. Shake off any excess mixture. Cook the calamari, turning occasionally, for about 2 minutes or until it turns a light golden color. Transfer the cooked calamari to a greased baking tray and keep warm in the oven while you cook the remaining calamari. Serve the calamari sprinkled with chopped chili and green onion.
