Elevate your cooking skills with our irresistible salt and pepper squid recipe.
Ingredients:
  • 3 (about 600g) large cleaned squid hoods
  • 1L (4 cups) vegetable oil
  • 40g (1/4 cup) plain flour
  • 2.40 gm salt
  • 1 tsp ground white pepper
  • 1 tsp Chinese five-spice
  • 1/2 tsp ground chilli
  • Soy sauce, to serve
  • Sliced fresh red chilli, to serve
Instructions:
  • Thinly slice through one side of each squid hood lengthwise using a sharp knife. Lay them flat with the inside facing up, score the surface diagonally, then cut into 3.5cm squares and gently pat dry with paper towels.
  • Heat the oil in a large wok over medium heat until it reaches 190°C on a thermometer or until a 5cm cube of bread turns light golden in 10 seconds.
  • Combine flour, salt, pepper, Chinese five-spice, and chili in a medium bowl. Gently toss in the squid until coated evenly.
  • Dredge half of the squid in the flour mixture, shaking off any excess. Cook in oil for 2 minutes until golden and curled. Transfer to a paper towel-lined plate. Reheat oil to 190°C and repeat with remaining squid.
  • Garnish with fresh lemon wedges and drizzle with spicy chili soy sauce. Serve immediately.
