Salty, tangy oven-baked or grilled chicken with a crispy crust.
Ingredients:
  • 2 cups cider vinegar
  • 1 egg, lightly beaten
  • 3 teaspoons salt
  • 1 teaspoon poultry seasoning
  • 8 boneless chicken thighs, with skin
Instructions:
  • Combine cider vinegar, vegetable oil, egg, salt, and poultry seasoning in a large bowl. Add chicken thighs, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 1 hour.
  • Heat your oven to a toasty 350 degrees F (175 degrees C).
  • Place the chicken thighs in a baking dish and generously coat them with a quarter of the flavorful marinade.
  • Roast chicken in the preheated oven for 30 minutes.
  • Remove excess marinade to ensure the chicken skin crisps up during baking (a baster is handy for this). Bake until chicken is fully cooked, around 15 minutes, reaching an internal temperature of at least 165°F (74°C) when checked with a thermometer.
