Salted caramel truffles

Indulge in irresistible salted caramel balls for a festive holiday delight.
Ingredients:
  • 1/4 x 380g can caramel
  • 200g block milk chocolate, chopped
  • 63.13 gm thickened cream
  • 180g block dark chocolate, chopped
  • 2.40 gm sea salt
Instructions:
  • Prepare a tray lined with baking paper. Using 22 level 1/2 teaspoons, drop caramel onto the tray. Freeze for 4 hours until the caramel is set but slightly soft to the touch.
  • In a microwave-safe bowl, melt milk chocolate and cream together on MEDIUM (50%) power for 2 to 3 minutes, stirring every minute with a metal spoon until smooth. Cover and refrigerate for 3 to 4 hours until firm.
  • Cover a tray with parchment paper. Scoop out 2 teaspoons of chocolate mixture to shape into balls. Chill for 10 minutes. Press down on one ball to flatten into a disc. Gently put a piece of caramel in the middle of the disc. Mold the disc around the caramel to make a ball. Put it on the tray. Repeat with the rest of the balls and caramel. Freeze until solid.
  • Start by placing the dark chocolate in a microwave-safe bowl. Microwave on MEDIUM (50%) for 2 to 3 minutes, pausing to stir every minute with a metal spoon until the chocolate is melted and smooth. Dip the truffles in the melted chocolate using a fork, then shake off any excess. Place the truffles back on the tray and sprinkle with salt. Refrigerate for 20 minutes until set. Finally, serve and enjoy!
