Trinidadian saltfish breakfast: A flavorful island dish with saltfish, perfect with hard boiled eggs or toast.
Ingredients:
  • 8 ounces salted cod fish
  • 4 tablespoons vegetable oil
  • 2 onions, chopped
  • 3 tomatoes, chopped
  • 2 red bell peppers, chopped
  • 1 tablespoon lemon juice
  • 1 pinch red pepper flakes
  • 6 leaves lettuce
  • 1 avocado - peeled, pitted and sliced
Instructions:
  • Boil the fish in a large pot of water to reduce saltiness. Drain and repeat. Flake the fish and gently press out excess liquid.
  • In a large skillet, saute oil, onions, tomatoes, and peppers for 2 minutes until fragrant. Add flaked saltfish, lemon juice, and hot pepper. Simmer over low heat until nearly all moisture evaporates.
  • Place the mixture in the center of a serving dish and surround it with fresh lettuce and sliced avocado.
