Trinidadian saltfish breakfast: A flavorful island dish with saltfish, perfect with hard boiled eggs or toast.
Ingredients:
8ounces salted cod fish
4tablespoons vegetable oil
2onions, chopped
3tomatoes, chopped
2red bell peppers, chopped
1tablespoonlemon juice
1pinchred pepper flakes
6leaveslettuce
1avocado - peeled, pitted and sliced
Instructions:
Boil the fish in a large pot of water to reduce saltiness. Drain and repeat. Flake the fish and gently press out excess liquid.
In a large skillet, saute oil, onions, tomatoes, and peppers for 2 minutes until fragrant. Add flaked saltfish, lemon juice, and hot pepper. Simmer over low heat until nearly all moisture evaporates.
Place the mixture in the center of a serving dish and surround it with fresh lettuce and sliced avocado.
