Crispy Jamaican fritters with bacalao, tomatoes, and green onions, fried to golden perfection.
Ingredients:
  • 6 ounces dried salted cod fish
  • cold water, to cover
  • 1 cup all-purpose flour
  • 2 teaspoons ground black pepper
  • 1 teaspoon baking powder
  • 1 large tomato, chopped
  • 2 green onions, chopped
  • 0.5 cup water
  • vegetable oil for frying
Instructions:
  • Rehydrate and desalinate the cod by soaking it in cold water for 8 hours to overnight.
  • Prepare the fish by removing bones and skin, then flake and shred into small pieces. Set aside for later use.
  • In a large bowl, combine sifted flour, pepper, and baking powder. Mix in tomatoes, green onions, and flaked cod. Pour in 1/2 cup of water and stir until thoroughly combined.
  • In a spacious, heavy skillet, warm 1/4 inch of oil over medium heat.
  • Spoon batter into hot oil in the skillet and fry until golden brown and crisp, about 5 minutes on each side. Drain on paper towels and serve hot.
