Jamaican-style cornmeal porridge with coconut milk, vanilla, nutmeg, and cinnamon from the Holness family.
Ingredients:
  • 0.33333334326744 cup cornmeal
  • 0.25 cup whole milk
  • 0.25 cup coconut milk
  • 3 tablespoons white sugar
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 2 tablespoons raisins
Instructions:
  • In a blender, mix water, cornmeal, whole milk, coconut milk, white sugar, vanilla extract, salt, nutmeg, and cinnamon until velvety smooth.
  • In a saucepan, bring the mixture to a boil and whisk occasionally until it begins to thicken, approximately 5 minutes. Lower the heat when small bubbles start to form. Stir frequently until it reaches your desired thickness, about 5 minutes. Finally, mix in the raisins.
  • Allow the dish to cool covered off heat for about 5 minutes before serving.
