Instant Pot Jamaican chicken and rice: A flavorful twist on a traditional recipe, perfect for quick and easy comfort food cravings!
Ingredients:
  • 3 skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1 cooking onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 (15 ounce) can black beans, drained
  • 1.5 cups long-grain rice
  • 1 (8 ounce) can corn, or to taste
  • 1 cup coconut milk
  • 1 tablespoon Scotch bonnet hot sauce, or to taste
  • 2 teaspoons ground thyme
  • 2 teaspoons kosher salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons brown sugar
  • 1 teaspoon allspice
Instructions:
  • Preheat a multi-functional pressure cooker like an Instant Pot on the Saute function. Add oil and cook chicken, onion, and garlic until fragrant, about 1 to 2 minutes, making sure not to brown the garlic.
  • Combine broth, black beans, rice, corn, coconut milk, hot sauce, thyme, black pepper, brown sugar, and allspice in the pot. Stir until well mixed. Seal the lid, set to high pressure, and close the vent. Cook for 15 minutes, then let pressure release for about 10 minutes.
  • Let the pressure release naturally following the manufacturer's guidelines for 10 to 40 minutes. Unlock and take off the lid.
