Indulgent carrot cake with pineapple, raisins, walnuts, and coconut for a moist and unforgettable treat.
Ingredients:
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 3 large eggs
  • 0.75 cup buttermilk
  • 0.75 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups shredded carrots
  • 1 (8 ounce) can crushed pineapple with juice
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 1 cup raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then generously grease and flour an 8x12-inch pan.
  • Mix the flour, baking soda, cinnamon, and salt in a medium bowl; set aside.
  • In a large bowl, combine sugar, eggs, buttermilk, oil, and vanilla. Gradually blend in the flour mixture until just combined.
  • Mix together shredded carrots, pineapple, coconut, walnuts, and raisins in a separate bowl; fold into cake batter with a large wooden spoon until incorporated. Transfer the batter into the prepared pan.
  • Bake in the oven until a toothpick inserted into the center of the cake comes out clean, approximately 1 hour. Let the cake cool for at least 20 minutes before serving.
