Sam's worcestershire beef ribs

Crowd-pleasing beef ribs in flavorful Worcestershire sauce.
Ingredients:
  • 2.5kg beef short ribs, bone in, cut into 3 rib sections (see tip)
  • 56.88 gm olive oil
  • 2 carrots, peeled and chopped
  • 2 celery sticks, chopped
  • 1 red onion, chopped
  • 2 tomatoes, chopped
  • 750ml cola
  • 1020.00 gm beef style liquid stock
  • 228.75 gm Worcestershire Sauce
  • 62.50 ml apple cider vinegar
  • 3 bay leaves
  • 1/2 tsp chilli powder
  • Creamy polenta, to serve
  • Blanched cavolo nero, to serve
Instructions:
  • Preheat your oven to 160°C. Season the ribs generously with salt. Heat oil in a large ovenproof saucepan over high heat. Sear the beef ribs for 6 minutes until golden on all sides, then set aside.
  • Sauté carrot, celery, and onion in a pan until onion softens. Stir in tomato and cook briefly. Pour in cola, stock, Worcestershire sauce, vinegar, bay leaves, and chili powder. Bring to a boil, then add ribs and simmer.
  • Cover the dish with a lid and let it braise in the oven for 2½ hours until the meat is incredibly tender and easily falls off the bone. Then, separate the ribs from the sauce.
  • Simmer the sauce vigorously over high heat for 20 minutes until it reduces by half. Remove and discard the top layer of fat. Add the ribs back to the reduced sauce and heat until warmed through. Serve with creamy polenta and cavolo nero.
