Ingredients:
250ml (1 cup) pineapple juice
250ml (1 cup) lemonade, chilled
62.50 ml firmly packed coarsely choppedfresh mint
150g frozen raspberries, thawed
80ml (1/3 cup) white sambuca
Instructions:
Mix the pineapple juice, lemonade, and mint in a bowl, cover with plastic wrap, and chill in the fridge for 30 minutes for enhanced flavors.
Mash the raspberries in a small bowl with a fork until they are almost smooth.
Evenly distribute the sambuca among serving glasses. Strain the pineapple juice mixture over the sambuca. Spoon the mashed raspberry gently over the pineapple mixture to create a floating effect. Serve immediately.
