Ingredients:
  • 250ml (1 cup) pineapple juice
  • 250ml (1 cup) lemonade, chilled
  • 62.50 ml firmly packed coarsely chopped fresh mint
  • 150g frozen raspberries, thawed
  • 80ml (1/3 cup) white sambuca
Instructions:
  • Mix the pineapple juice, lemonade, and mint in a bowl, cover with plastic wrap, and chill in the fridge for 30 minutes for enhanced flavors.
  • Mash the raspberries in a small bowl with a fork until they are almost smooth.
  • Evenly distribute the sambuca among serving glasses. Strain the pineapple juice mixture over the sambuca. Spoon the mashed raspberry gently over the pineapple mixture to create a floating effect. Serve immediately.
