Savory beef and rice stuffed bell peppers baked to perfection, with leftover filling turning into a delicious pasta sauce or sloppy joe option on hamburger buns.
Ingredients:
  • 2 pounds ground beef
  • 1 (15 ounce) can mixed vegetables, drained
  • 2 (15 ounce) cans tomato sauce, divided
  • 0.5 cup cooked rice
  • 1 small onion, chopped
  • 3 green onions, chopped
  • 3 cloves garlic, chopped
  • 1 egg
  • salt and ground black pepper to taste
  • 4 large green bell peppers, tops removed, seeded
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Combine ground beef, mixed vegetables, 1 can of tomato sauce, rice, onion, green onions, garlic, egg, salt, and black pepper in a large bowl until mixed well. Stuff the bell peppers with the beef mixture. Place the peppers in a baking dish, pour the remaining can of tomato sauce over the top, and cover with foil before baking.
  • Roast in the oven until the beef is fully cooked through, approximately 1 1/2 hours.
